This week-long vacation will consist of a very small and intimate group of about 12 people. It is an 8 day, 7 night all-inclusive experience that offers a wonderful mixture of some of Central Italy’s highlights with some truly off-the-beaten-path treasures unique to our area. It is a week that embraces Italian cooking, culinary and artistic tradition with some of the most wonderful off-the-beaten-path places in Tuscany, Umbria and Alto Lazio. It is a week of discovery as you integrate into Italian village life, living among the villagers, shopping with them, and getting to know them. Most of all, it is a week of fun, family and laughter as we share what makes Italy so special in a very personal way.

The Cooking Classes
We'll have four half-day completely hands-on cooking classes this week, Our cooking classes are not demonstrations. They are 100% hands-on. We structure them so that you can be as involved as you wish in every stage of every course we prepare. So, if you are up for it, we will get wrist-deep as we make Fettuccine from scratch, Risotto, homemade Limoncello, Biscotti Gelato, and country wood-fired pizza. You will learn to make exciting desserts such as the best Tiramisu you will ever taste , new appetizers like Panzanella, sausage and cheese bruschetta, and much more.

For those would rather eat than cook, our classes take place at our beautiful 18th century country villa. Take control of our 90-bottle wine rack, relax, take a stroll, or just enjoy the wonderful Italian countryside. Whether you are cooking or not, the time we spend at the villa is always a highlight.

The Excursions
When we are not cooking, we are heading out on some truly incredible excursions. We'll visit some amazing wineries, including small family-run places where we will meet the owners and dine with them, and the most beautiful wine cellar in the world. We'll visit a small home-based olive mill that still uses the antique methods to produce some of the most incredible extra virgin olive oil. We'll visit a real Deruta ceramics factory where we will try our hand at the pottery wheel, and we'll of course see many popular sights, such as Assisi, Orvieto, Pienza and more

When the week is over, you will have experienced the real Italy that few tourists have ever experienced. You will have made new friends, and you will have learned why Italian culture is so amazing... because you will have lived it.

Day 1 (Saturday)
Welcome to Soriano!

For those arriving in Italy today on early flights, we offer a shuttle to Soriano nel Cimino from Rome Fiumicino airport at 10:30 AM. If you are already in Italy, or your flight arrives after 9:45 AM in Rome, we offer a second shuttle from the Orte Train station (a 35 minute train ride from Rome Termini station, and easy access from other major Italian cities) at 3:45 PM. For those arriving at times that do not coincide with our shuttle schedule, we can arrange for a private driver to bring you to Soriano for an extra charge.

Once in Soriano we will help you to your accommodations for the week and give you some time to get settled in, unpack and rest up. As you get settled in, you will find some snacks and drinks waiting for you when you get to your home.

At around 6PM, we will meet with those that are up to it for a little shopping for tomorrow’s class. We will stop in a local fruit and vegetable shop, a grocer, and local butcher as we meet some of the shopkeepers we will get to know during our week and pick up what we will need for tomorrow's class.

Next we will do casual walking tour of Soriano’s medieval quarter. We’ll have a walk around the narrow streets of this beautiful area. During our walk we’ll stop in the studio of the extremely talented local artist, Riccardo Sanna and have a look at what he is working on.

After our walk, we will stop in a local Gelato shop for one of our signature daily activities: Gelato! We believe it is your duty to have at least one gelato per day when you are here, so we will get right to it. While having our gelato, we'll talk about the week ahead and get to know one another a little more.

For dinner tonight we will dine in an ancient monastery in Soriano that has been converted to a wonderful restaurant. Here we will sample many local specialties in the first of many multi-course meals as we dive head first in Italian culinary culture. The menu for tonight’s dinner is:

Appetizer:
A sampling of Local Salame, Prosciutto, Porcini Bruschetta, Olive Bruschetta, Ascoline Olives (fried sausage-stuffed olives), and Sutrini (a local crepe with romano cheese)

First Course
For our first course tonight, we will have samplings of two local pasta dishes: Gnocchi col Ferro (a local specialty eggless pasta that is hand rolled in an Arrabiata sauce) and Ciuffetti Sorianesi (hand made pasta purses, stuffed with radicchio and speck in a Parmesan cream sauce).

Second Course
After our pasta dishes we will sample local grilled sausages and tagliata al aceto balsamico (A grilled steak, marinated in balsamic vinegar atop a bed of rucola salad)

Dessert
Finally we will be brought a lemon sorbet dessert and end our evening with a glass of Limoncello

As always, wine is provided with all dinners, and we favor small local wineries wherever we dine. Tonight's wine will be a local red Umbrian wine.

Day 2 (Sunday)

This morning we will all meet in a local coffee bar and pastry shop that is in Soriano’s main Piazza. Here we will have our traditional Italian breakfast of freshly baked pastries and cappuccino.

After breakfast, we’ll take a short drive around Soriano during which we’ll get a little history of this medieval village, stop for a few picture opportunities, and see some of the more prominent local monuments.

Next we will take the short drive down to our 18th century villa in the countryside below Soriano where our classes will take place. While we do the shopping for most classes together, all of the shops are closed on Sunday, so we will have done all of the shopping for today’s class the day before.

Today's class will start out with what is without question our most popular appetizer: Panzanella is a Tuscan bread salad made with fresh tomatoes from our local gardens, onion, olive oil, vinegar, and other various fresh veggies growing outside. For our first course, we will prepare a Raddichio & Proscuitto Cream Risotto, followed by our family recipe for Tuscan roasted chicken & potatoes that we promise will leave you in absolute awe. Finally for dessert we will be preparing our family recipe for Tiramisu, which is guaranteed to be the best you have ever tasted.

After lunch, we will rest a bit over an espresso before we go on our first excursion to the beautiful Tuscan town of Pitigliano. This is the southern-most town in Tuscany. We’ll tour the town & visit the ancient Jewish ghetto. Time for shopping & wine tasting. Very unique and interesting artisan sauces for sale here.

On the way home, we will take the scenic drive around Lake Bolsena, and through Montefiascone (Known for its Est! Est! Est! white wine), and back into Soriano.

Dinner tonight will be truly special. We will be hosted in the beautiful mountain villa of Maria Grazia for dinner. She’ll host us in her private home nestled in the woods above Soriano. She will have prepared a wonderful multi-course home-made dinner for us as we relax in this wonderful setting with our gracious hosts for the evening.

After our morning breakfast we head to the Umbrian city of Deruta, which is known for its world-famous ‘majolica’ ceramics. Deruta is home to a centuries old ceramics tradition that is unparalleled anywhere in the world, and is among the most valued Italian ceramics internationally. We will have a factory tour, and those that are up to it can try their hand at the pottery wheel. If you are interested in purchasing any pottery or ceramics this week, this is the place with extremely deep discounts compared to what you will find elsewhere... a fraction of the costs back home.

As we leave Deruta, we will make our way to Assisi, the hometown of St. Francis. Still surrounded by its ancient walls, is sits on the slopes of Mount Subasio with beautiful rose stone buildings, winding narrow streets, noble palaces and balconies full of flowers.

We'll stop for lunch together in a local restaurant in Assisi, then you will have the afternoon on your own to visit the Basilica of St. Francis, browse the many beautiful shops, and do some sightseeing.

Dinner tonight is at an extremely unique Pizzeria that serves seemingly endless varieties of pizza ‘by the meter’. We will laugh and drink wine and beer while we sample pizza selections like you have never dreamed of. Tonight's pizza will be one you will dream of long after you have returned home!

Day 4 (Tuesday)

We'll start the day with breakfast, followed by shopping for today's class. We’ll visit the village grocers, butchers, vegetable stands, etc. as we shop with the locals. For those that would rather sleep in than shop, we'll meet after shopping before we head down to the villa again for our second cooking class.

Today we will learn the secrets of making homemade Fettuccini from scratch, and prepare a wonderful Bolognese sauce for it that has been passed down through the generations in our family. Our appetizer today will be a wonderful Bruschetta topped with a mixture of local sausage and stracchino cheese. Our second course will be Brasato al Vino Nobile, a roast braised in exclusive Vino Nobile di Montepulciano wine (that we will have been marinating since our Sunday class). Our side will be sauteed veggies from the garden outside, followed by an Amaretto-Plum Crostata (a baked dessert tart) for dessert.

After lunch, we will give you a few hours back at your home to take a break during the afternoon in Soriano before we head out toward the nearby city of Viterbo for the late afternoon and evening. Viterbo is the largest city between Rome and Florence. It boasts great historic significance, as it served as the seat of the Pope for years during the 13th century.

We will visit the Papal Palace, the ‘unofficial’ Vatican during a time when life in Rome was considered too dangerous for the Popes and Cardinals. In fact, this is where the first papal conclave occurred, and where the tradition of white and black smoke began in the choosing of a new pope.

In addition to the Papal Palace, Viterbo holds the distinction of having what is considered to be the best preserved medieval quarter in the whole of Europe.

We’ll stroll the streets of the medieval quarter, and take some time for shopping on Viterbo’s Corso shopping district before having dinner in this magnificent city.

Day 5 (Wednesday)
A Day of Wine & Cheese in Tuscany

After our morning breakfast we will head out for a day full of wine, cheese & more in beautiful Southern Tuscany.

We'll start by driving to our furthest point, the town of Castelnuovo d'Abate. To get there, we will be driving the famous Orcia Valley Wine Trail through this picturesque wine region which evokes the classic image of Tuscan rolling hills. This is the area of Tuscany that most of us think of, seen in many well-known movies, such as Under the Tuscan Sun, Life is Beautiful, and many more.

As we arrive, we will visit the St. Antimo Abbey, a beautiful Romanesque church that dates back to the 9th century. It sits in a valley just outside of Montalcino, surrounded by vineyards and olive groves. Here we will witness the monks of the abbey as they do the Gregorian Chant during a brief service.

After the service, we will go to nearby Montalcino, home of what is arguably the best of all Italian wines: Brunello. Instead of going to the big wineries for impersonal tastings like other tours, we have something something truly exclusive in store for you today. We will visit the small, private Croce di Mezzo winery in Montalcino which shares a fenceline with Biondi Santi and Fattoria dei Barbi.

We will be hosted to a wonderful lunch with the owners of the estate, as we sample their Brunello wine with our meal. As we have lunch together, they will share their family history with you and answer any question you can imagine. You are sure to fall in love with this gracious family. It is always one of the major highlights on our weeks, and provides for a truly exclusive and unique Brunello experience. After lunch, they will treat us to a private tour of their cellars and vineyards before we move on.

If we have time after lunch, and if anyone in our group would like, we will make a stop at the Casanova di Neri winery in Montalcino, which is widely considered the best of the Brunello wines... So much so that their 2001 Brunello was rated as the #1 wine of the year by Wine Spectator Magazine in 2006.

Next, we’ll take the short drive to beautiful Pienza, known for its incredible Pecorino cheese. You will have a some time to walk around this charming village, do some Pecorino cheese tastings and some shopping before we leave for the town of Montepulciano, where we will do our final wine tasting and tour of the day.

Montepulciano is known for its Vino Nobile wine, a competitor for the Brunellos. Here we will tour the town’s ancient 14th century cellar that was built underneath the Palace of Cardinal Ricci and is widely considered to be the most beautiful wine cellar in the world. After the cellar tour, we will participate in a complete tasting of Montepulciano’s fantastic wines. Those that have seen the 2009 film 'New Moon' (The sequel to 'Twilight') will recognize this wine cellar and other areas of town from the movie.

After this long day, we will drive back to Soriano where we will have a buffet dinner waiting for us at the Papacqua Fountain Park in Soriano, at the base of the 16th century Chigi Palace.

After breakfast we will drive to the Umbrian city of Orvieto which is the home to one of Italy’s most magnificent cathedrals, as well as the world-renowned white Orvieto Classico wine and beautiful ceramics shops.. Here we will give you the morning free to explore the Duomo & shop in this wonderful cliff-top town.

In the early afternoon,t we will take a short drive to a small family-run winery and antique olive mill in the village of Castiglione in Teverina. Here, one of the owners will give us a private tour of their wine cellar and olive mill, followed by a tasting of their line of wines and their olive oil. As we are tasting, we will have a wonderful buffet lunch in their garden made by the owners with many local delicacies, and of course… their wine!

After lunch, we will drive back to the villa in Soriano for our next class:

Today we will learn how to make Italy's famous after dinner lemon liqueur, delicious and authentic Biscotti, and Gelato.

Besides the traditional Limoncello, we’ll also make our own family recipe for Crema di Limoncello (Limoncello Cream Liquor).

Our Biscotti today will be a local specialty known as ‘Tozzeti’, which are delicious Hazelnut biscotti, traditionally dipped in wine when eaten.

While our Biscotti are baking, we’ll make a wonderfully unique Dark Chocolate Pepperoncino Gelato, followed by a Vanilla Gelato with fresh fruit and a balsamic vinegar reduction.

When we have finished our class, we will prepare our family recipe for Spaghetti alla Carbonara for dinner.

When today’s class is over, each couple (or single traveling alone) will take home a ½ liter bottle of each Limoncello we make, plus a bag of our Biscotti to take home when the week is over (as if they will last that long).

Today is market day in Soriano. This is a true local market, not a tourist market. Here you will find clothing, accessories, kitchen items, food, etc. You will have the early morning to enjoy the market at your leisure or sleep in a bit before we start our day.

At around 10:30 AM, we will head out for the nearby dying city of Civita di Bagnoregio, a nearly deserted town that was originally built by the Etruscans in the 6th century BC. It is called the dying city because it is literally crumbling away thanks to thousands of years of erosion, to the point that it is now accessible only by a foot bridge. Civita resembles a ghost town, but is extremely well kept as a place where time is frozen. While there, we will visit Civita's ancient olive mill that was built by the ancient Etruscans and have lunch in a lovely little trattoria in what is left of the town.

After lunch, we will drive back to the villa for our final (and always most popular) class of the week: Country Wood-Fired Pizza!

In Italy, making Pizza is a social event, similar to the way many of us think of having a Barbeque. It is a time of fun and laughter where bonds are forged. It is a truly special experience while the group shares the homemade pizza one tray at a time as it is pulled from the wood-fired brick oven and carried piping hot to the garden table under the vines and stars.

We will prepare several kinds of dough, and prepare the fresh tomatoes, mozzarella, and many other ingredients for this wonderful evening together. Each person will help while they learn every stage of this event. You will make the dough, drink some wine, prepare the ingredients, drink some wine, help fire up the oven, drink some wine, and even handle the peel as the pizza cooks.... and then we will drink some wine! It will be true Italian country pizza, like nothing you have ever experienced.

We’ll learn to make Focaccia, Pizza Margherita, Sweet Onion pizza, Sausage & Porcini Pizza, and for dessert we will have Sugar Pizza and finally Nutella Pizza.

Unfortunately our week comes to a close this morning. The shuttle leaves town at 6:15 AM as most outbound flights require early morning airport arrivals. We will be at the Orte train station for a drop off by 6:40 AM, and at the Rome Fiumicino airport by 8:00 AM. This will be sufficient time for outbound flights leaving after 10:00 AM.

Menu Variations
The menus listed on the itineraries are subject to change depending on season. This is a summer itinerary. We use only fresh ingredients wherever possible, so if we are unable to prepare a certain dish, it will be substituted. In case of expected rain, Pizza night may be replaced with Gnocchi class, especially between October and April. Occasionally we make changes to some items as certain dishes prove to be very popular. For example, we sometimes do a Sausage, Onion & Vodka sauce with our fettuccine, and we sometimes make Amatriciana sauce instead of Carbonara.

Weather
Many places on our itineraries don't work well with rain. When we do get rain, we try to rearrange the schedule to make the best of it, but substitutions may be made.

Arrival Shuttle Service
We offer a free shuttle service from Rome FCO airport at 10:30AM on the Saturday your week begins. If you are flying in that day, be sure to get a flight that arrives early enough for the shuttle.

If you are already in Italy on the start date, or arrive later, we offer a free afternoon shuttle from the ORTE Train Station at 3:45 PM, which is a 35 minute ride from Rome Termini Station.

We stay within the regions of Tuscany, Umbria and Alto Lazio...
This week we will be sleeping every night at our home-base of Soriano Nel Cimino, which is also the location of all cooking classes this week. Our excursions each day will take us out in zones based on time and distance, always returning to Soriano at the end of the day. The longest distance of any day is about 2 hours.

Many of our guests fly into Rome, where we offer a 10:30 AM shuttle on the start date. Others, who are already in Italy, can take advantage of our 3:45 PM shuttle from the Orte Train Station, which is very close to us.

Before you choose to become our guest, we want you to know everything you can possibly know about our vacations without actually being there. To make this possible, we have a vast collection of photos, videos, answers to frequently asked questions, and much more. Still, perhaps the best way to really get the feeling is through the words of our past guests, so be sure to look at our testimonials section. Extend Your Trip

Many of our guests make their week with us part of a larger trip to Italy or Europe in general. Often, they will simply spend a few days before or after in places such as Rome, Florence, Venice, or the Amalfi Coast, and need some help planning.

We are always happy to help, and will gladly do as little or as much as you like. If you simply need to find a good place to stay for a night, or if you would like for us to completely plan everything from airline tickets, to extended stays, hotels, rail tickets, tours in other cities, etc. just let us know and we will be happy to oblige.

Our experience in this area is unmatched, and we would love to put everything together to help make your trip as smooth and carefree as can be.
