Chocolate Salami


  • 6 oz (200 gr) butter biscuit cookies (ex: Le Petit Beurre “Lu” Biscuits)
  • 4.25 ounces (120 gr) of butter (about one stick of butter) softened
  • ½ Cup (100 gr) of sugar
  • ½ Cup (50 gr.) bitter cacao powder
  • ¼ Cup (50 gr.) dark chocolate
  • 2/3 Cup (70 gr.) shelled and skinned hazelnuts
  • 1 TBSP (15 ml.) of water
  • Powdered Sugar


  1. Chop the cookies (biscuits) by hand, reducing half to small pieces and the other half to crumbs.
  2. Add the cocoa powder and stir.
  3. In a mixer, chop 80% of the hazelnuts with the sugar,
  4. Adding this to the cookie/cocoa mixture.
  5. In a double boiler, melt the dark chocolate and allow it to cool.
  6. Add the rest of the ingredients: the softened butter, the remaining whole hazelnuts, and the melted chocolate.
  7. Add the 3 tablespoons of water, mix everything together well with your hands, taking care that the butter blends well with the other ingredients.
  8. Dust the counter with abundant powdered sugar.
  9. Take the chocolate mixture and roll it into a salami shape by hand.
  10. Be sure your salami is well coated with powdered sugar and place it on a sheet of aluminum foil.
  11. Roll it up well in the foil then place it in the fridge for a minimum of 2 hours (the longer it stays in the fridge the better!)
  12. Remove the roll from the fridge; cover it with more powdered sugar, and slice into thick slices with a sharp knife.
  13. Eat cold and enjoy…no cooking necessary!
