Bruschetta with Pancetta & Stracchino Cheese


  • Italian Bread
  • 150 grams (5 ounces) Stracchino Cheese  (You can also use Farmers Cheese, Crescenza, or Mozzarella)
  • Salt
  • Pepper
  • 8 slices of smoked pancetta
  • 15 ml (1 Tbsp) of olive oil
  • Fresh rosemary


  1. Slice the bread .
  2. Sauté’ the pancetta with the olive oil and the rosemary. When brown and crispy drain on paper towels
  3. In a bowl, crumble the pancetta and mix with the Stracchino cheese, salt and pepper
  4. Use two teaspoons to place small balls of mix onto the bread.
  5. Top with a piece of crispy pancetta
