My name is Ann Marie and live in Maryland along the beautiful Chesapeake Bay. I will be coming with 2 friends of mine and am looking forward to this cooking vacation. I hope to return home with a new found ability to make delicious ravioli!

I live and teach on a large cattle station situated between Alice Springs and Tennant Creek in the Northern Territory of Australia.

We have a four week break from school during June and July, so I have booked your culture vaccation that begins 30th June 2012.I am so looking forward to it and meeting you both,as well as other participants in the cultural vaccation.

I am a passionate cook, especially Italian food. I think I should have been born with Italian genes rather than a combination of Irish,Scottish and Russian ancestory.

We are going through the dreary process of applying for our required Schengen visas. The process is complicated in the extreme. The visas won't be granted without proof of paid-for return air tickets and proof of foreign exchange purchases. You can't buy forex without those same air tickets but not more than 60 days before departure. They also need certified copies of your bank and credit card statements for the last three months! They also need a letter from your employer that they expect you back at work after the visit. I was thinking of getting Annie to write one for me. I don't think the Schengen states like South Africans that much. I envy the US citizens who don't need visas for a short-term visit to Italy.

Since there are no direct flights from Jo'burg to Rome, we fly on Emirates which is as close as it gets to a straight line, with a stopover of 4 1/2 hours in Dubai. We arrive in Rome early Saturday afternoon after the Soriano shuttle so the plan is to catch the train to Orte and then catch the Soriano shuttle from there. Once we reach Soriano, we will have been on the go for some 27 hours or so. We are unlikely to be really good company at the welcoming dinner on Saturday night. One bit of good news...the time difference between Jo'burg and Rome is only 1 hour so no jet-lag, just sleep deprivation.

We can hardly wait. All the best 'till the 28th April.
