Almond Cookies

These almond cookies are very popular in cafes all around Sicily. They are easy to make and even easier to eat!

Ingredients
 2.20 lbs Blanched Almonds
 3 cups Sugar
 1 Lemon Peel
 2 Drops Almond Extract
 3 tsp Vanilla
 1 ½ cups Whole Milk

Grind the blanched almonds in a food processor until completely ground.

In a large bowl, mix all the ingredients except for milk.

Slowly add milk.

The dough is not supposed to be very soft. If it is too soft, you can put in the fridge and bake it the next day.

Line 2 baking trays with parchment paper.

Use a pasty bag and shape the cookies into small round shapes.

It is best to allow the cookies to rest in the fridge for one night.

Once the dough has had time to rest, preheat the oven to 400 F (200 C).

Bake until barely browned on the edges. The center should be soft and chewy.

Cool them on cookie trays.

You can decorate them with candied fruit, or sprinkle them with powdered sugar. You can also make different shapes.
