Bab\u00e0 al rum are small yeasted brioche-like cakes swimming in a rum-spiked citrus syrup. They are best when made in advance, making them a great dish to bring to a party.<\/h2>\n

The Dough<\/div>\n
¾<\/span> cup<\/span> Manitoba Flour (Manitoba also available on Amazon)<\/span><\/div>\n
1<\/span> tbsp<\/span> Sugar<\/span><\/div>\n
2<\/span> tbsp<\/span> Butter<\/span><\/div>\n
1 ½<\/span> tbsp<\/span> Yeast<\/span><\/div>\n
2<\/span> <\/span> Large Eggs<\/span><\/div>\n
½<\/span> fl oz<\/span> Water<\/span><\/div>\n
The Syrup<\/div>\n
1<\/span> cup<\/span> Water<\/span><\/div>\n
⅔<\/span> cup<\/span> Sugar<\/span><\/div>\n
¾<\/span> cup<\/span> Limoncello<\/span><\/div>\n
3<\/span> <\/span> Orange Rinds<\/span><\/div>\n
3<\/span> <\/span> Lemon Rinds<\/span><\/div>\n
1<\/span> <\/span> Cinnamon Stick<\/span><\/div>\n
2<\/span> <\/span> Cloves<\/span><\/div>\n<\/div>\n

The Dough<\/div>\n

\n

Melt the yeast in the water and add 3 tbsp of the flour<\/p>\n<\/div>\n<\/div>\n

\n

Mix ingredients and knead just a little and then leave to rise<\/p>\n<\/div>\n<\/div>\n

\n

In a warm area of the kitchen, cover with foil paper until it becomes double its size.<\/p>\n<\/div>\n<\/div>\n

\n

Using a planetary mixer, blend the remaining flour, the sugar, salt with half of the eggs and mix until the dough becomes smooth.<\/p>\n<\/div>\n<\/div>\n

Add the rest of the eggs, half at a time, mixing well each time.<\/p>\n<\/div>\n<\/div>\n

\n

At this point the first dough (called “The Biga”) should be ready. Add it to the mixture in the mixer and let it incorporate until it becomes smooth and silky,<\/p>\n<\/div>\n<\/div>\n

Add the butter, 1 tsp at a time, making sure that each time the dough becomes smooth and silky.<\/p>\n<\/div>\n<\/div>\n

Leave the dough to rest for about 10 minutes.<\/p>\n<\/div>\n<\/div>\n

\n

Grease the molds (use only butter and no flour)<\/p>\n<\/div>\n<\/div>\n

\n

Fill each mold up to 1\/3 of its capacity.<\/p>\n<\/div>\n<\/div>\n

\n

Place in an oven dish making sure to leave some space between each mold.<\/p>\n<\/div>\n<\/div>\n

\n

Cover with aluminum foil and leave to rise until it reaches the edge of the mold.<\/p>\n<\/div>\n<\/div>\n

\n

Once ready, take off the paper and leave 10 minutes.<\/p>\n<\/div>\n<\/div>\n

Heat the oven to 350\u00b0F (traditional oven) or 325\u00b0F (ventilated or convection oven)<\/p>\n<\/div>\n<\/div>\n

\n

Bake for 10 minutes, then take the bab\u00e0 out of the molds, and replace directly on the oven dish and continue baking for another 10 minutes.<\/p>\n<\/div>\n<\/div>\n

Heat water with all the ingredients except the limoncello until the sugar melts. The water must not boil.<\/p>\n<\/div>\n<\/div>\n

When the sugar has melted, leave to cool down.<\/p>\n<\/div>\n<\/div>\n

Take out all the spices and flavorings and add the limoncello.<\/p>\n<\/div>\n<\/div>\n

\n

Soak the bab\u00e0, making sure the syrup is roughly 100\u00b0F. Gently squeeze it and place it in the syrup (as if you were delicately squeezing a sponge to fill it with water).<\/p>\n<\/div>\n<\/div>\n
