Adding this balsamic vinegar glaze will add a fun spin on a classic risotto recipe.<\/h2>\n

1 ¼<\/span> cups<\/span> Arborio Rice<\/span><\/div>\n
4<\/span> tbsp<\/span> Butter<\/span><\/div>\n
2<\/span> cups<\/span> Warm MIlk<\/span><\/div>\n
4<\/span> oz<\/span> Shaved Parmesan Cheese<\/span><\/div>\n
¼<\/span> cup<\/span> Grated Parmesan Cheese<\/span><\/div>\n
Ingredients for the Balsamic Vinegar Reduction<\/div>\n
1<\/span> cup<\/span> Good Quality Balsamic Vinegar<\/span><\/div>\n
1<\/span> tbsp<\/span> Butter<\/span><\/div>\n
1<\/span> tsp<\/span> Salt<\/span><\/div>\n
2<\/span> tbsp<\/span> Sugar<\/span><\/div>\n<\/div>\n

Directions for the Balsamic Vinegar Reduction<\/div>\n

\n

In a small saucepan, stir together vinegar, sugar and salt and bring to a boil<\/p>\n<\/div>\n<\/div>\n

Boil vigorously until volume is reduced by half (to 1\/2cup)<\/p>\n<\/div>\n<\/div>\n

\n
\n

Reduction should take between 7-12 minutes, but this is only a guideline. Watch closely for best results.<\/p>\n<\/div>\n<\/div>\n

\n

When reduced, stir in butter<\/p>\n<\/div>\n<\/div>\n

\n
\n

Allow to cool<\/p>\n<\/div>\n<\/div>\n

\n

Store at room temperature or refrigerate. If refrigerated, allow to come to room temperature before using, as butter will harden in fridge<\/p>\n<\/div>\n<\/div>\n

Prepare Balsamic Vinegar Glaze. Allow to cool before beginning the rice.<\/p>\n<\/div>\n<\/div>\n

Bring a large pot of salted water to a boil.<\/p>\n<\/div>\n<\/div>\n

\n

Add arborio rice to the boiling water and continue boiling for about 10 minutes<\/p>\n<\/div>\n<\/div>\n

\n

While rice is boiling, heat the milk and keep it warm<\/p>\n<\/div>\n<\/div>\n

\n

Melt butter in a non-stick skillet<\/p>\n<\/div>\n<\/div>\n

\n

Drain the rice, add it to the butter in the skillet and stir to coat rice with butter. Do not let it brown.<\/p>\n<\/div>\n<\/div>\n

Add warm milk, a little at a time, while stirring rice. Allow liquid to absorb before adding more<\/p>\n<\/div>\n<\/div>\n

Continue to add milk, slowly towards the end<\/p>\n<\/div>\n<\/div>\n

Check the texture frequently, stirring until the rice is al dente and all milk is absorbed.<\/p>\n<\/div>\n<\/div>\n

Taste rice and add salt if needed.<\/p>\n<\/div>\n<\/div>\n
