In the town of Soriano, especially in autumn, Chestnuts are in everything you eat, ravioli with chestnuts, soup with chestnuts, so why not gelato, too. This is Italy, after all. <\/h2>\n

12<\/span> oz<\/span> heavy cream<\/span><\/div>\n
8<\/span> oz<\/span> milk<\/span><\/div>\n
6<\/span> <\/span> egg yolks<\/span><\/div>\n
5<\/span> oz<\/span> sugar<\/span><\/div>\n
1 ½<\/span> tsp<\/span> dark rum<\/span><\/div>\n
¼<\/span> tsp<\/span> pure vanilla extract<\/span><\/div>\n
6<\/span> oz<\/span> cooked chestnut puree<\/span><\/div>\n
2<\/span> oz<\/span> chopped cooked chetnuts soaked in chetnut liqueur<\/span><\/div>\n<\/div>\n

IF USING WHOLE COOKED CHESTNUTS, PUREE THEM IN A BLENDER WITH SOME OF THE MILK AND CREAM THEN CONTINUE TO STEP 2<\/p>\n<\/div>\n<\/div>\n

Coarsly chop 2 oz cooked chestnuts, place in a bowl and cover with chestnut liqueur<\/p>\n<\/div>\n<\/div>\n

\n

In a medium saucepan, pour the milk, 8 oz of the cream, the chestnut puree’ and the vanilla. Bring to a boil<\/p>\n<\/div>\n<\/div>\n

\n

In a large bowl, whisk egg yolks and sugar together<\/p>\n<\/div>\n<\/div>\n

\n
\n

Pour some of boiling milk into the egg yolk\/sugar\/chestnut mixture, whisking vigorously so that the hot milk does not cook the eggs<\/p>\n<\/div>\n<\/div>\n

\n

Pour mixture through a sieve, back into the saucepan<\/p>\n<\/div>\n<\/div>\n

\n

Return to medium-low heat and stir continuously till the mixture thickens a bit.<\/p>\n<\/div>\n<\/div>\n

Remove from heat<\/p>\n<\/div>\n<\/div>\n

\n
\n

Add remaining 4 oz cream and the rum<\/p>\n<\/div>\n<\/div>\n

\n
\n

Chill in refrigerator. <\/p>\n<\/div>\n<\/div>\n

\n

Freeze in gelato machine when mixture is cold<\/p>\n<\/div>\n<\/div>\n

\n
\n

When mixture is almost finished freezing, add the chopped drunken chestnuts and allow them to be mixed into the gelato.<\/p>\n<\/div>\n<\/div>\n

\n
\n
