¾<\/span> cup<\/span> heavy cream<\/span><\/div>\n
10<\/span> oz<\/span> chestnut puree<\/span><\/div>\n
4<\/span> <\/span> sprigs rosemary<\/span><\/div>\n
6<\/span> <\/span> egg yolks<\/span><\/div>\n
11<\/span> oz<\/span> sugar<\/span><\/div>\n
⅔<\/span> cup<\/span> water<\/span><\/div>\n<\/div>\n

In a saucepan, combine milk, cream, chestnut puree’ and 3 rosemary stalks<\/p>\n<\/div>\n<\/div>\n

Stir over medium heat till puree’ dissolves <\/i> 5 minutes<\/a><\/span><\/p>\n<\/div>\n<\/div>\n

\n

Bring to a simmer and cook for <\/i> 5 minutes<\/a><\/span><\/p>\n<\/div>\n<\/div>\n

\n

Remove from heat and let stand for <\/i> 10 minutes<\/a><\/span>
\n for rosemary to infuse.<\/p>\n<\/div>\n<\/div>\n

\n

In a large bowl, whisk egg yolks and 5 oz sugar until pale.<\/p>\n<\/div>\n<\/div>\n

\n

Pour hot milk\/puree mixture into the egg yolks, in a slow stream, whisking constantly to prevent the eggs from cooking<\/p>\n<\/div>\n<\/div>\n

\n

Return to saucepan and cook, stirring continuously till the mixture thickly coats the back of a spoon <\/i> 5 minutes<\/a><\/span><\/p>\n<\/div>\n<\/div>\n

Strain into a bowl placed over ice to cool, then freeze in gelato maker according to manufacturer’s directions <\/p>\n<\/div>\n<\/div>\n

Bring 6oz sugar and water to a boil, stirring until sugar dissolves<\/p>\n<\/div>\n<\/div>\n

\n

Add remaining rosemary leaves and continue to boil for <\/i> 5 minutes<\/a><\/span><\/p>\n<\/div>\n<\/div>\n

Let cool<\/p>\n<\/div>\n<\/div>\n
