Bruschetta can be topped with anything your heart desires, this is topped with soft Italian cheese and sausage or pancetta

Ingredients
Italian bread
5 oz stracchino cheese
salt
pepper
1 tbsp olive oil
Pancetta and Rosemary
8 slices of pancetta
fresh rosemary
Sausage
mild sausage (no fennel)

Preheat the oven to 400 F

Slice the bread.

For the pancetta: Sauté’ the pancetta with the olive oil and the whole rosemary twig. When brown and crispy drain on paper towels

For the sausage: Remove the casings from the sausage and place meat in a bowl with the cheese. (If you are using Mozzarella, shred it first).

In a bowl, crumble the meat and mix with the Stracchino cheese, salt and pepper

Use two teaspoons to place small balls of mix onto the bread.

Bake until golden brown.
