Fresh and boozy sorbet with Italian Grappa and summer pears

Ingredients
1 ½ cups caster sugar
¾ cup water
2 lbs soft pears
2 lemons
4 tbsp grappa pr vodka
Directions

Place the sugar and water in a pan and bring to a boil.

Reduce the heat and simmer for 3 minutes

Add quartered pears and continue to simmer for 5 minutes

Add the juice and lemon zest of one lemon. Add the grappa. Puree in a blender.

Let stand for 10 minutes

Refrigerate until cold, about 2 hours

Pour into pre-cooled gelato maker and follow the instructions on your machine.

Take the remaining lemon. Remove the zest and place in a cup. Add a teaspoon of sugar. Cover and place in the freezer.

Sprinkle the lemon zest over the sorbet just before serving.
