Amalfi Caponata Salad

This is an Amalfi spin on Sicilian dish called Caponata. A salad of day old bread, tomatoes, eggplant, tuna, beans and olives.

Ingredients
 200 g of day old bread
 200 g cherry tomatoes
 100 g pickled eggplant
 80 g canned tuna in olive oil
 100 g spanish white beans
 150 g green olives
 1 small onion
 1 tbsp extra virgin olive oil
 oregano
 basil
 salt
 pepper
Directions

Cut the tomatoes, place in a large bowl and add all other ingredients (except the bread.)

Soak the bread in cold water for 10 seconds, remove onto paper towel, and squeeze out remaining water. Break into bite-size pieces.

Toss bread in with other ingredients, Mix well, and serve
