Lesso (Bollito)

When one thinks of "Comfort Food" in Central and Northern Italy, "Lesso" (also known as Bollito) is high on the list. It is warm, light, and incredibly healthy. It could be best compared in terms of comfort to how we see chicken soup -- Not feeling well? Have some Lesso. Want to keep it light? Have some Lesso. But it is Italian, so it can be so much more. It can be light and healthy, or rich and delicious... it all depends on how you serve it.

Ingredients
 2 lbs Chuck Roast
 2 Carrots
 2 Zucchini
 2 Medium Potatoes
 2 Stalks of Celery
 2 Medium Onions
 1 Bunch of Swiss Chard
 2 Cloves of Garlic
 5 Sage Leaves
 5 Basil Leaves
 1 Rosemary Twig
 1 Thyme Twig
 2 tsp Oregano
 2 tsp Marjoram
 1 Bunch Italian Parsley
 2 Bay Leaves
 2 tsp Salt
 1 tsp Black Pepper
 Extra Virgin Olive OIl (optional)
 Parmesan Cheese (Optional)
Directions

Wash the chuck roast and trip all of the excess fat, then place in a large pot.

Wash all of the vegetables and cut into manageable pieces, then place in the pot.

Add all herbs and seasonings to the pot.

Add 2 quarts of water.

Bring the entire pot to a boil, then reduce the heat and let simmer for 90 Minutes

When done, remove the meat, chop into large pieces, and set it aside.

Allow the broth and vegetables to cool for 30 Minutes

Blend the mixture of broth, herbs and vegetables until creamy.

Add the chopped up beef to the blended broth

Bring the soup back to a boil, add some angel hair pasta, and serve with parmesan cheese

Simply top with a little extra virgin olive oil & high quality Parmesan cheese (Reggiano is best). This is incredibly simple and delicious.

A very popular way to serve the beef in Italy is with mayonnaise.. especially if it is home made!

Garlic Sauce

Make a simple sauce with Italian parsley, garlic, salt, pepper & olive oil. Drizzle it over the beef... Fantastic!

Chopped in the Soup:

Chop up the meat and place back in the pot when you bring it all back to a boil for a richer soup.
