Bruschetta with Pancetta & Stracchino Cheese

Ingredients
 Italian Bread
 5 oz Stracchino Cheese (You can also use Farmers Cheese, Crescenza, or Mozzarella)
 1 tbsp Extra Virgin Olive Oil
 8 Slices of smoked pancetta
 Salt
 Pepper
 Fresh Rosemary

Slice the bread

Sauté’ the pancetta with the olive oil and the rosemary. When brown and crispy drain on paper towels.

In a bowl, crumble the pancetta and mix with the Stracchino cheese, salt, and pepper.

Toast the bread

Use two teaspoons to place small balls of mix onto the bread.

Top with a piece of crispy pancetta
