Can you accomodate people with food allergies?

We sure do. Read on...


It is not your fault that you have a food allergy, and you deserve a wonderful vacation. So we will do everything in our power to accommodate you.

We will make sure we have alternatives during our cooking classes if it is necessary, and while we are on the road, we will make sure all of our staff knows about your allergies.

You may be astonished to learn that most restaurants in Italy are far more able to deal with allergies than most of the world -- even gluten-free diets! This is mostly because the food is prepared fresh!

If you are the first to book a specific week, and there are at least 8 people in your group, we will be happy to offer a completely custom menu for your cooking classes, and we will customize any of the pre-planned meals we have while on the road in order to accommodate you.

There are some limitations:

Cross-Contamination

If your allergy is such that you cannot eat a certain food, it is no problem. However, if you have problems ith cross-contamination, we may not be able to accommodate your needs. For example, if you have an allergy that will not allow you to be in a kitchen where a certain type of food is present, we will have a problem because we cannot change what our other guests will be making and eating in order to accommodate your allergy.

Allergies to many staple Italian foods

No matter what you are allergic to, we are happy to substitute, but in extreme cases, it may not be worth it for you. We simply want you to know this in advance. For example, if you cannot eat pork, tomatoes, cheese OR pasta, we have no problem. But if you cannot eat pork, tomatoes, cheese, AND pasta, the Italian diet won't leave much for you to eat. In other words, we would hate for you to come on a food and wine vacation if all you can eat is a salad... Unless you understand that as your limitation and decide to do it anyway.

Substitutes will sometimes not be made from scratch.

For example, if you have a gluten allergy, we will happily prepare gluten-free pasta for you. However, while the normal pasta is made from scratch, the gluten-free pasta is not.
