From the moment we met Spartaco and our fellow travelers at the exquisite Palazzo Seneca and I received my new Italian name, I knew that we were off to a wonderful week. From chopping veggies, rolling out pasta, and fileting fish under the expert guidance of Emanuele and Roberto; to crafting designer pizza in the arms of Luigi; to early morning truffle hunting with Nina and Sophie; to a rollicking chocolate class at the Perugia factory; to exploring the castles, cathedrals, and alleys of medieval hill towns, each day brought more food, wine, friendship and great, great fun. If laughter burned calories, I would have left Norcia a whole lot thinner. The itinerary was perfect, the staff clearly know and love what they are doing. I can't wait to return.
